The director of the FBI has a history of documenting conversations like this and he shared the memo with other FBI officials immediately after the conversation, it qualifies as sufficient documentation.

Add in the fact that Trump admitted he fired Comey because he wanted the Russia investigation to go away, and this becomes a HUGE problem for Trump.
