Exactly what is the significance of plus (good) and minus (poor) plays by fielders and how they correlate to winning or losing games?

+/- plays relate to hits saved/given up by fielders that other fielders may/may not have gotten to. you can also get a +/- play by saving bases, ie keeping a runner from getting a double.
