You can stop drafting as early as you want, or keep drafting until all the available players are gone.  There should be enough available players for 7-8 per team, if everyone keeps drafting that far.  I've initially set it as 6 AAA pitchers and 6 AAA position players (real-life players of course, for 37 total players per team).  That can be adjusted upward if needed.
