#581 Schedules Q. How many days are there during the "offseason" (aka rollover period)?
  A. There are 110 HBD days during the rollover period. Injured and fatigued players recover as usual during this period.
#777 Schedules Q. When do worlds roll over?
  A. The scheduler runs between the hours of 5a and 8a everyday except for Sunday, Tuesday, and Thursday. We only run the scheduler for two worlds at a time.

This also applies to when worlds are scheduled once filled (and approved if private).
