In the first play, there is one defender who even gets near Brady. He's still blocked and he tries to bat the pass down. There isn't much pressure at all. On top of that, your "perfect pass" is to a receiver who had already beaten the defense - any competent NFL QB should make that throw.
On the second play, Brady doesn't "scan the field", he drops back, no one is instantly open, and he runs to the wide open section of the field for a short gain and a first down. Again, any competent NFL QB should be able to notice a huge opening to run into for a short gain and a first down.
